Better than Chips! Crispy Fries and Cheese Sauce

Ingredients:

  • 700 grams of potatoes
  • Water for washing (to remove starch)
  • Salt
  • 25 grams of cornstarch
  • 2 eggs
  • 100 grams of breadcrumbs
  • Frying oil
  • 20 grams of unsalted butter
  • 1 teaspoon of flour
  • 1/4 teaspoon of chili powder
  • 125 ml of milk
  • 75 grams of cheddar cheese
  • Hot sauce (optional)
  • Chili powder for sprinkling (optional)

Instructions:

  1. Peel and wash the potatoes thoroughly to remove the starch.
  2. Cut the potatoes into sticks and boil them for 5 minutes.
  3. Soak the potatoes in cold water with a teaspoon of salt for 30 minutes.
  4. Drain the potatoes and let them dry.
  5. Put the potatoes in a plastic bag with cornstarch, shake well to coat.
  6. Beat the eggs in a bowl. Dip each potato stick in the beaten eggs, then roll them in breadcrumbs.
  7. Heat the oil in a pan over medium heat and fry the potato sticks until golden. Remove and drain on paper towels.
  8. In a saucepan, melt the butter, add the flour, and mix well.
  9. Add chili powder, milk, and cheddar cheese. Stir until you get a creamy sauce.
  10. Add hot sauce if desired.
  11. Arrange the fried potato sticks on a plate and pour the cheese sauce over them.
  12. Sprinkle with chili powder if you like a bit of heat.
